Righto, I’m all about making salads interesting, so this creation is light and great for if you’re keen to stay super clean or on a cleanse.
Ingredients:
2 handfuls of baby spinach
1 pomegranate, the seeds popped or you can buy a punnet of the seeds (some supermarkets stock them, it takes away the mess)
½ a punnet of strawberries, sliced into discs
1 cucumber, sliced
¼ cup if mung beans, washed
¼ cup of sunflower seeds
½ cup of shredded coconut
pinch of salt and pepper to season
Dressing:
3 tablespoons of extra virgin olive oil
2 tablespoons of apple cider vinegar
1 teaspoon of wholegrain mustard
Method:
Pop all your salad ingredients into a big bowl, then mix really well. Then season and in smaller bowl mix your salad dressing and pour over the salad. Then mix again and serve up!
