POKE BOWL (Grain RICE FREE KETO and PALEO friendly)
Poke is all the rage and it’s a really healthy and simple way to eat.
Ingredients
400 grams of sushi grade salmon (works great with most raw sashimi fish, I love it with sashimi grade tuna too), cut into cubes
1 avocado, diced
¼ of a red onion diced
¼ cup of tamari (gluten free soy sauce)
1 tablespoon of sesame oil
juice and zest of 1 lime
1 cup shredded cabbage
1 carrot, grated
3 radishes’, finely sliced
1 zucchini, spiralled or grated
1 tablespoon of roasted sesame seeds
top shredded nori (just buy the sheets and finely slice if you can’t find it shredded)
Method
Let’s start off by popping your salmon and avo into a bowl, then adding you marinate ingredients. That’s your tamari, onion, lime juice and sesame oil. Then set aside while your ensemble your salad. I put the shredded cabbage in the bottom like a little bed, then in no particular order add your carrot, radish, and zucchini. Then on goes your salmon and avo, I also let the leftover marinade become a dressing over the salad. Then top with shredded nori and toasted sesame seeds.
