Who doesn’t love chocolate, and who doesn’t love macaroons? Enough said! This recipe is easy, clean and fun to make! So get a little gaggle of mates around and whip up these perfectly sweet treats!
Serves: makes about 24 macaroons
Ingredients:
1 and ½ cups of desiccated coconut
1 cup of almond meal (same as almond flour, alternatively you and grind your own almonds)
½ a cup of melted extra virgin coconut oil
½ a cup of raw cocoa powder
½ a cup of coconut nectar (can use any sweetened like honey, maple syrup, rice syrup or dates)
A pinch of salt (I love to use Himalayan)
Method:
Preheat the oven to 160 degrees, then literally pop all your ingredients into a food processor then using damp hands make little balls out of your mixture and place them on a lined baking tray, then slightly press them down a little and bake for 15 minuets, then leaven them to cool.
TIP:
You can leave these totally raw if you like and have them like bally sweet treaties but it you want that crunch that’s where the cooking bit comes in. And feel free to tweak them by adding goji berries or chilli!
